Meal Plan Monday

Hope everyone is having a restful Memorial day with friends and family!  We are home again after another 5 days on the road with friends so we are spending the day unpacking and getting ready for the week ahead before going to a BBQ tonight!  My stomach is a little off after so much delicious eating out in the past month so I’m craving homemade, fresh foods!!  I hit the grocery store last  night and picked up fresh blueberries, cherries, melon, pineapple, raspberries and tomatoes & green peppers (can’t wait until all of that is ready in my own garden!!).  Came home and chopped it all up along with a big bowl of strawberries from our garden and we had that with slices of havarti cheese for dinner.  Mmmm, definitely keep that in mind as a standby meal for summer!  Up on the menu for this coming week is salmon that I’ll grill and serve with zucchini and couscous, and bran muffins for breakfast.

Bran Muffins

3 cups bran flakes cereal

1 cup boiling water (to soften flakes)

1/2 cup butter

2 eggs

2 1/2 cups flour

1 cup sugar

2 1/2 tsp baking soda

2 cups buttermilk

Preheat oven to 400.  In large bowl, combine cereal and boiling water.  Stir in butter and eggs.  Add remaining ingredients until mixed.  Spoon into greased muffin cups.  Bake 18-20 minutes or until top springs back when lightly touched.
